Showcasing the art of preservation and fire, this creative menu celebrates smoked meats, vibrant pickled vegetables, and globally-inspired spices. This curated spread balances smoky, tangy, and savory notes in a mountain setting that’s anything but ordinary.

From Thai Chili & Peanut Chicken Wings to Jamaican Hot Pepper Prawns, each dish brings heat and depth to your plate. Savor the richness of Smoked Lamb with Minted Honey, the delicate luxury of Pimento Cheese Gougères with Smoked Trout Roe, and the comfort of Warm Smoked Potato Salad alongside our signature Dilly Sisters – pickled green beans, corn, and butternut squash served warm.
